I had figotten about this recipe its so easy, quick and filling. serves 4.
1 tbs of olive oil
1 onion, thinly sliced
2 garlic cloves, chopped
2cm piece of ginger (i dont put this in as i dont like it)
20g rogan josh paste
400g tin chopped toms
400ml veg stock
100g split red lentils
300g raw king prawns
fry onion, garlic and ginger for 5 mins. add the curry paste, chopped toms, stock and lentils. bring to simmer then add cauliflower cook for 15 mins
stir in prawns and spinach for the last 3 mins of cooking time.
serve and eat (you could have brown rice with it but its very filling)
