If you run out of ideas like I do for meals whether for you or your family, try this one. It’s quick, easy and extremely healthy. Serve with green salad or extra veg.

Broccoli Lemon Chicken
Spray of olive oil
340g lean chicken breast fillets
2 sliced garlic cloves
200g broccoli (sliced/chopped into 2 inch sections)
200ml stock(chicken or veg) / or 200ml water to reduce salt intake
1 tsp cornflour
1 tbsp honey
zest & juice of 1 lemon
handful of unsalted cashews
How to cook
Heat oil in large frying pan.
Add chicken and lightly fry for 3/4 mins until golden.
Remove chicken from pan and add garlic and broccoli.
Lightly stir fry for 1 to 2 mins or until tender.
Mix stock, cornflour and honey together and pour into pan and stir.
Tip chicken back into the pan and let it heat through.
Add lemon zest and juice and cashews.
Stir and serve, eat.
